Mum's Macaroni and Cheese
This is the simple, baked macaroni and cheese that I grew up with. Before putting it in the oven, top your mac n'cheese with blanched and skinned tomatoes for Mum's true version. Full disclosure: I think tomatoes are generally gross, so I've omitted them.
INGREDIENTS
-10oz macaroni (or pasta of your choice)
-4TB butter
-4TB flour
-3 cups whole milk
-1/2 tsp salt
-Pepper to taste
-2 cups grated cheese plus more for topping (the more different varieties the better!)
-1TB dijon mustard
-1/2 cup breadcrumbs
METHOd
- Butter a deep baking dish
- Set pasta water to boil
- Set oven to 350 degrees F
- Make roux: melt butter in a pan, add flour and stir until smooth, add milk in a stream while whisking constantly until well incorporated
- Stir mustard into roux
- Stir cheese into roux
- Cook pasta per instructions
- Stir salt and pepper into roux
- Drain pasta and combine with roux
- Pour pasta and cheese mixture into baking dish
- Toss remaining cheese and breadcrumbs together and sprinkle on top of pasta
- Bake in oven for 1/2 hour or until top is golden and liquid is bubbling
